Gado Gado – An Indonesian Salad

According to wikipedia Gado-gado (in Indonesian or Betawi language), also known as Lotek (in Sundanese and Javanese) is an Indonesian dish or Indonesian salad consisting of boiled vegetables served with a peanut sauce dressing.

I made this recipe for the first time today, though had tried it a number of times before. This peanut sauce has quite variations, but the one used here has a very spicy, sweet and sour taste. Some people simply have this peanut sauce with boiled rice. Its one of my family’s favourite.

 

 

 

 

Ingredients

Peanut Sauce

Peanuts 375 grams

Tamaraind 125 grams

Onions 2 sliced

Green Chillies 6

Palm sugar 250 grams

Salt 1.5 tsp

Vegetables

Potatoes 3

Eggs 6

Cucmber 4

Carrots 4

Spinach 1 bunch

Cabbage 1/2

Optional ingredients

peas

bean sprouts

french beans

lettuce

tofu

prawn crackers

 

Method

Boil potatoes and eggs separately

Once boiled, peel the potatoes skin, cut them into chunks or slices and deep fry, for the eggs cut them into halves or quarters and set aside

Boil water in a pot, then blanche individually spinach, cabbage and carrots. Set aside

Cut cucumber into cubes and set aside.

For the peanut sauce

Separately fry onions and peanuts then strain them.

Next put onions, peanuts, palm sugar, salt, tamarind (soaked in water and pulp extracted), green chillies and water in a grinder and form into a paste.

Serve them as showed.
