This bottle gourd and chana dal recipe is an Indian recipe. The combination of vegetable that is sabzi and lentils that is dal has its own delicious taste.

Recipe: Bottlegourd and Chana Dal (Lauki Dal)

Ingredients

  • Bottlegourd 1 cup chopped
  • Bengal Gram Chana Dal 1 ½ cup soaked
  • Garlic 4-5 Cloves (medium Size)
  • Ginger 1.5” pc.
  • Onion 2 medium
  • Tomato 2 medium
  • Coriander Powder 1 ½ tbsp
  • Red Chilli Powder 1 tsp
  • Turmeric Powder ¼ tsp
  • Garam Masala Powder 1 tsp
  • Fenugreek seeds a pinch
  • Fennel Seeds 1/8 tsp
  • Bayleaf 1
  • Salt to taste
  • Oil 1 tbsp

Instructions

  1. Slice onions. Grate ginger. Chop tomatoes and garlic and keep aside.
  2. Grind onion, ginger and garlic together to a fine paste.
  3. Grind tomatoes separately to a smooth paste. Keep aside.
  4. Heat oil in a pressure cooker and add bay leaf, fennel seeds and fenugreek seeds. Saute for a second.
  5. Now add the onion, ginger, garlic paste and fry till it turns brown.
  6. Add coriander powder, red chilli powder, turmeric powder and fry with the help of little water till the masala is done and fat separates out.
  7. Now add the tomato puree and continue frying till fat separates out.
  8. Add salt, chopped bottle gourd, soaked dal. Mix well and fry for a minute.
  9. Now add water and garam masala powder. Mix well and pressure cook on a medium heat for 15 minutes or till the dal is tender.
  10. Serve hot with plain rice.

Aaloo Palak Sabzi (Potatoes and spinach) using Chicken Stock Cubes by Chef Nadeem

Ingredients

  • Spinach (Palak) 1 kg
  • Potatoes 2 medium sliced
  • Mustard Seeds (Rye dana) 1 tsp
  • Chilli Powder 1tsp
  • Turmeric Powder (haldee)1 tsp
  • Cumin Seeds 1 tsp
  • Whole Red Chillies 4 to 5
  • Knorr Cube 1
  • Oil

Instructions

  1. Soak palak in water for 15 minutes to let all the dust sink. Slice potatoes and leave aside in some water to avoid change in colour.
  2. Heat water with some salt, soak palak for 30 seconds, drain palak in strainer and let it cool after pouring cold water in it. In that same water boil potatoes for 5 minutes and strain.
  3. Heat oil put mustard seeds, zeera n whole red chillies, let it fry for a while and put in potatoes. Cook for some time and then add red chilli and haldee, stir well and add some water.
  4. Next add palak to it and mix well. Now mash the knorr cube with hand and add to pot. Add more water once the boil comes cover the pot and leave it on slow flame for dum.
  5. Serve with roti or rice.
